I have done hamburger with rinsing off all the fat. It wasn't very good rehydrated. I ran into a video where she doesn't drain off any of the fat and does sausage which has a lot of fat. Now I let the fat rise to the top and discard it. But I no longer rinse it. And I put a half cup of breadcrumbs per pound. Chicken has been terrible to rehydrate and now I am adding breadcrumbs to that too. My meats are two years old. I have kept an eye on them and have opened some jars. There is not sign of rancidity or mold. They are delicious as a dry snack. I of course vacuum sealed them. I don't know how long they will stay perfect, but two years plus is pretty hopeful that I will have some years left. We'll see.......And I only put a moisture absorber in the jar, not an oxygen absorber.

Instead of buying expensive cans of beans from the store, try cooking your dry beans and then dehydrate them. These "instant" beans can then be added to any dry soup mix and will basically be ready at the same time as any other vegetables in the pot.
